Blackberry Rice Porridge
A delicious and warming breakfast alternative to oat porridge, perfect for those chilly winter mornings.
1 cup basmati rice
2 ¼ cups water
½ cup low fat coconut milk
Pinch of salt
2 tbsps honey
1.2 tsp fresh lime juice
2 cups fresh blackberries
Place the rice and water in a medium saucepan over medium heat. Bring to the boil, then reduce heat to low and simmer, covered for 13 minutes
Check the consistency, the rice should be cooked. If not, cook for another minute or so.
Stir in coconut milk for two minutes, then remove the saucepan from the heat and let sit for 5 minutes
Stir through the salk, honey and lime juice. Adjust sweetness with more honey if needed.
Divide between four serving bowls and serve with fresh blackberries on the side.
To add protein - either add a scoop of protein powder or 1 C of high protein yoghurt
